舌に爽やか! レモンタヒニドレッシングでいただく春の豆サラダ

  • サニーレタス:½個
  • 豆類(春に旬のグリーンピース、いんげん、そらまめなど):½カップ
  • 木綿豆腐:1パック
  • チャイブ:適量
  • アーモンド(サンフラワーシードやパンプキンシードも可):½カップ
  • レモンジュース:1個分
  • タヒニ(白ごまペーストで代用可):大さじ1
  • にんにく: 2片(量はお好みで調整可)
  1. レタスを一口大に切る。
  2. 新鮮な豆類を使用する場合、熱湯で1分茹でておき、冷凍の豆類を使用する場合は解凍しておく。
  3. 豆腐の水気を取り、さいの目に切る。
  4. チャイブを根に近い方までみじん切りにする。
  5. 上記1~4までの材料とアーモンドを入れてボウルに混ぜる。
  6. 小さな容器にレモンジュースとタヒニを入れてスムーズになるまで混ぜたら、にんにくを入れてさらに混ぜてドレッシングを作る。(濃ければ小さじ1杯の水を加えるなどして調整してもOK)
  7. 食べる直前にドレッシングを加えて完成!


Title: Refreshing Spring Pea Salad with Lemon Tahini Dressing

No matter how much I love warm, filling foods, curling up under the blankets, and taking it easy, I’m always ready for a change of pace once winter turns into spring. Along with hanging up my heavy coats and tucking the extra-warm blankets away until next season, I start cooking lighter, cooler foods using the fresh ingredients I’ve missed. This pea salad with lemon tahini dressing is just the kind of fresh, light, and easy-to-make recipe I love for lunch, and the protein in the tofu and almonds keep it filling enough to be a meal by itself.

For the salad:
½ head of sunny lettuce
½ cup of peas (fresh or frozen)
4oz of もめん豆腐
2 stalks of chives
a handful of almonds (raw or lightly roasted), about ½ cup

For the dressing:
Juice of 1 lemon
1 Tbs of tahini or sesame paste (I used sesame paste, because it’s easier to find in the supermarket and tastes just the same in this dressing)
2 cloves of garlic (you can use less or more, depending on how you like the taste of garlic)

Chop the lettuce into bite-size pieces. If you are using fresh peas, cook them for one minute in boiling water then drain; if you are using frozen peas, thaw them. Drain your tofu and cut into small cubes. Dice the chives into tiny pieces, both white and green parts. Put all these ingredients plus a handful of almonds (or another nut or seed of your choice—sunflower seeds and pumpkin seeds also work well) in a large bowl and toss together.

For the dressing, in a small bowl blend the lemon juice and tablespoon of tahini with a fork or pair of chopsticks until smooth. Mince the garlic and mix as well. If the dressing is very thick, at a teaspoon of cold water at a time until you reach the desired consistency.

When ready to eat, divide the salad onto two plates and drizzle with your dressing.
